Fertility Fit California Quinoa Salad Recipe

 Embarking on the journey towards conception and fertility is a profound and deeply personal experience. Beyond medical interventions, the role of nutrition in supporting fertility cannot be overstated. In this blog post, we will explore the significance of nutrition during fertility and introduce a nutrient-packed recipe that has been a staple in my own fertility journey and one that I have made over and over for more than a decade – the California Quinoa Salad which is similar to one that Whole Food makes.  I love this one because it has a ton of colors, textures, and flavors, and no added oils or fats. It's filling and it's great for the whole family. I am trying to be better about incorporating different fruits and vegetables into my family’s diet. I am currently reading a book about the importance that plants have on overall health, but also with our hormone health and reducing inflammation- which is at the source of so many health complications (especially PCOS, Endometriosis, and infertility)

The Importance of Nutrition in Fertility:

Quinoa – A Protein Powerhouse:

  • Quinoa is a complete protein, containing all essential amino acids crucial for reproductive health. These amino acids are the building blocks of the body, supporting cell and tissue repair, vital during pregnancy.

Mango – Rich in Antioxidants:

  • Mango, whether fresh or frozen, is bursting with antioxidants such as beta-carotene and vitamin C. Antioxidants combat oxidative stress, which has been linked to infertility. They also contribute to a healthy immune system.

Red Onion – Folate Source:

  • Folate is a key nutrient for fertility, aiding in the development of a healthy neural tube in the early stages of pregnancy. Red onions provide a folate-rich addition to the salad.

Red Pepper – Vitamin B6 Boost:

  • Vitamin B6 is known to regulate hormonal balance, and red peppers are an excellent source of this vitamin. Maintaining hormonal equilibrium is crucial for fertility.

  • Limes and balsamic vinegar not only add a zesty flavor to the salad but also provide vitamin C, known for its role in immune support and collagen formation.

California Quinoa Salad Recipe:

Ingredients:

  • 2 cups mixed quinoa (I use 1 cup raw quinoa rather than 2 cups because I like the ratio better) 
  • 4 cups water (for cooking quinoa)
  • 1 package frozen mango or 2-3 diced fresh mangos
  • 1/2 large red onion, diced
  • 1 medium to large red pepper, diced
  • 1 small bunch cilantro, chopped
  • 1-2 cups shredded, unsweetened coconut
  • 3/4 – 1 cup unsalted, dry-toasted slivered almonds
  • 1-1 1/2 cups raisins (golden raisins)
  • 2-3 cups frozen edamame, thawed
  • Juice of 4-5 limes
  • 3 – 4 Tbsp Balsamic Vinegar

Instructions:

  • Rinse quinoa well, and cook as directed.
  • Fluff quinoa well when done, spread out, and let cool.
  • Add all other ingredients and toss. Enjoy cold!!

For me, quick, easy, and delicious is most important. We are busy and I need a handful of recipes that I can quickly whip up to serve for the family but also to pack for lunch. I love re-discovering recipes that I used to make all the time and falling in love again.
