Fertility Fit: Roasted Carrot and Couscous Salad Recipe

 So I have a newfound love of carrots. It began a couple of years ago with a TikTok viral carrots recipe that reframed my carrot view. I always found them too hard - ie fresh baby carrots. I like the ones that are cut like ruffles to eat fresh with some hummus or dressing. But now, I roast a bag of carrots at the beginning of each week to throw in bowls, snack on, or as a side. I was excited to try this recipe because I LOVE peal couscous and carrots, so it was a win-win. This recipe is bursting with flavors and textures, this dish is a delightful combination of sweet, savory, and tangy elements that will tantalize your taste buds. Plus, with its simple preparation and wholesome ingredients, it's perfect for both weeknight dinners and special occasions. Ingredients:

  • 5 large carrots (about 10½ oz), peeled and large chopped
  • 2 tablespoons of olive oil
  • Salt, to taste
  • 2 cup of pearl couscous
  • 1 tablespoon of honey
  • 1 ounce of  apple cider  vinegar
  • ¼ cup dates, sliced long and thin
  • 1 /2 bunch of of chopped parsley
  • 1 teaspoon of chili flakes
  • 1 teaspoon of ground cumin
  • 1 lemon, juiced
  • 2 cups  ounces of plain  Greek yogurt
  • 1 teaspoon of salt
  • 1 teaspoon of ground coriander
  • Goat cheese to top with if you want!

Instructions:

1. Preheat the Oven:

Preheat your oven to 450°F  to ensure it's ready for roasting the carrots to perfection.

2. Roast the Carrots:

Place the chopped carrots on a roasting tray and drizzle with 1 tablespoon of olive oil. Season with salt according to your preference. Roast in the preheated oven for approximately 30 minutes until tender and slightly caramelized.

3. Cook the Giant Couscous:

While the carrots are roasting, cook the giant couscous in a pot of salted water according to the package instructions. Once cooked, drain and set aside.

4. Prepare the Glaze:

In a small bowl, combine the honey, white wine vinegar, and remaining 1 tablespoon of olive oil to create a flavorful glaze.
