Fertility Fit Jammy tomatoes and chickpeas

Ok, y'all.  This recipe is super delicious, hearty, perfect for the cold months but also a regular staple at our house now as the kids love it.  You could easily add some more tomatoes or double this recipe app, add some onions or spinach. It's also a great side dish. 

Ingredients:

  • 1 can chickpeas, rinsed
  • 2 cups cherry tomatoes
  • 1 bulb of garlic
  • Herbs de Provence
  • Dry or fresh Rosemary
  • Olive oil
  • Salt & pepper to taste

Instructions:

  • Prepare the Ingredients:
    • Rinse one can of chickpeas thoroughly.
    • Wash and dry 2 cups of cherry tomatoes.
  • Mix Ingredients:
    • Combine chickpeas, cherry tomatoes, and an entire bulb of garlic in a baking-safe dish.
  • Coat with Olive Oil and Herbs:
    • Drizzle olive oil over the mixture
    • Sprinkle Herbs de Provence and Rosemary to add flavor and fertility-boosting benefits.
  • Bake to Perfection:
    • Preheat your oven to 350°F.
    • Bake the mixture for 30 to 40 minutes until the cherry tomatoes are blistered and ready to pop.
    • Once cooled, pop the cooked soft garlic cloves into the mixture and use a fork to mash it so that it mixes well with everything out
